Some weeks back I was invited to lunch by a wonderful lady who hosts incredible meals in her home. One of the dishes she made was a beautifully baked salmon in a sweet Thai sauce. All of us at the table had to ask for the recipe and were dumbstruck when we heard it. This has got to be one of the easiest recipes ever! 3 ingredients, less than 5 minutes of preparation and you get dinner in 20 minutes.
Preheat oven to 190 degrees. Lay out a piece of salmon fillet in a baking tray. If you’re lazy like me and want a one dish kind of meal, layer cooked quinoa and broccoli together with the salmon.
Now make the sauce. Mix 1/4 cup of Thai sweet chilli sauce with 3/4 of small pack of coconut milk. You can adjust the proportions according to how sweet or rich you want the sauce to be.
Pour sauce over the fish and bake at 190 degrees for 15-20 minutes until the fish is done.
Garnish with fresh chilli and serve. The rich meaty texture of the salmon pairs beautifully with the baked broccoli and quinoa which is now drenched in the rich, creamy, spicy coconut sauce.
This is such an effortless recipe that it’s definitely worth trying. It would also work well as a main dish served with a salad side or spooned over pasta. Or better still, invite some people over for dinner and watch their jaws drop when you tell them how easy it is!
