Okay, to be honest, I’m a little embarrassed to be sharing this recipe. Because it’s so simple. But since I’m all for easy-to-put-together everyday cooking, here it is.
I haven’t been experimenting much in the kitchen these past few months. Work has been keeping me busy and it’s also left me feeling rather uninspired to try new recipes or to bake. Any ounce of energy left over for cooking is reserved for putting quick clean meals on the table. This recipe was tossed together when I needed to fix a simple lunch for one. I saw a jar of organic tomato sauce, eggs and some organic cream cheese in the fridge, and voila!
The ingredients are simple and yet they come together beautifully to create an innately satisfying and comforting meal. The dish is full of flavor, and the runny egg yolk and cream cheese give it a wonderfully rich, creamy texture.
That day, I spooned the egg and sauce over kamut spaghetti, and settled down on the couch with a giant grin. No wonder they say that it’s the simple things in life that are the most extraordinary.

You will need:
- 1 cup of organic tomato sauce
- 1 organic egg
- 1 tablespoon of organic cream cheese
Preheat oven to 200 degrees. Pour tomato sauce into an oven dish, make a little space in the middle, and crack your egg in. Put cheese on top and bake for 12-15 minutes until the egg is done the way you like it. Spoon over pasta or some crusty toasted bread and enjoy.
