Leftover Food Series: Macaroni

This is a super easy recipe which I attempted using whatever I could find in my pantry when I had to make dinner for one.  The Hubs came home later that evening after school and finished the leftovers, declaring it the best cheese mac he’s ever tasted.  Not bad for a dish I pretty much made on the fly 🙂

You will need

  • Macaroni for 2 or by my estimates about 6 handfuls (I used leftover macaroni from the previous day’s dinner)
  • 1 can of Cream of Mushroom Soup (I used the ones from Marks and Spencer)
  • 5 wedges of Laughing Cow Creamy Swiss Cheese
  • Grated parmesan or mozzarella 
  • Pepper to taste
Heat soup in saucepan, and when hot, toss in cheese wedges and stir to mix.  Add the macaroni and stir until everything is heated through.  Pepper to taste.  Pour the macaroni mixture into a baking dish, top with grated parmesan and bake for 25-30 minutes at 200 C until top is nicely browned.
