Go bananas

This is a recipe for the easiest banana cake ever! There’s no need to cream the butter or use fancy schmancy baking equipment.  All you need is a pot and an oven.  I made them over the Easter weekend, in the middle of the night because I had a bunch of over-ripe bananas just sitting on our dining table and driving me nuts.  Made for a wonderful midnight snack 🙂

You will need

125g butter
3/4 cup sugar (I used 1 cup brown sugar)
1 teaspoon vanilla essence
1 egg
2 ripe bananas (mashed)
11/2 cup of self raising flour
1/4 cup milk
Chocolate chips (optional)
 

Melt the butter, sugar and vanilla essence in a medium sized saucepan.  Remove from heat
Add in mashed banana and stir through until just blended
Add egg and mix in well.  Stir in flour, add milk and mix lightly
Add in chocolate chips
Bake at 170C for about 40 minutes
