What’s for dinner?

. Baked garlic chicken .

This is fast becoming our favourite recipe of all time.  It’s almost as good as fried chicken except very little oil is used, and there’s no frying involved.  A quick and healthy way to satisfy any craving for fried chicken, and the crispy garlic-breadcrumb-cheese bits are finger lickin good.  The Hubs still can’t believe it’s not fried.

You will need:

2 boneless chicken breasts
2 cloves of garlic (chopped)
1/2 cup of breadcrumbs
1/4 cup oil
1/2 cup of grated cheddar/parmesan
Salt and pepper

Microwave garlic and oil on high for 3 minutes.  Set aside.  Mix breadcrumbs and cheese (salt and pepper to taste) in a shallow plate.  Set up a coating station.  Dip chicken in garlic oil, and coat with breadcrumbs/cheese mixure.  Pour remaining breadcrums over chicken.  Bake for 30 minutes or until juices run clear.  Pair it with sides of your choice.
